Seafoam – The Updated Blue Hawaii Cocktail

This delightfully blue cocktail will make you feel like you’re on vacation

Seafoam Blue Hawaii Cocktail

Nothing brings a sense of comfort and serenity like staring into the beautiful blue ocean off the coast of your favourite Hawaiian Island. This updated version of the Blue Hawaii cocktail – dubbed ‘Seafoam’ – will bring you back to a place where the breeze is always warm. The striking blue hue of this cocktail of course comes from Blue Curacao – an orange flavoured liqueur. Combine with Malibu rum and pineapple juice, for a sweet and refreshing candy-like concoction.

Drinks like the Seafoam and Blue Hawaii are not for every palate. I’ll admit, that I only drink these once in a while as a fun treat. I prefer bitter or sour cocktails. I would classify the Seafoam as a dessert cocktail, similar to a Pina Colada. However, that doesn’t mean it’s not pretty to look at and delightful to drink!

Aquafaba vs. Egg Whites

This drink is called ‘Seafoam’ because we have added aquafaba – the liquid from canned chickpeas – to create a fluffy layer of sweet foam. Traditionally, egg whites are used to create this foamy layer in sour cocktails. It was discovered that aquafaba produces the same result without cracking an egg. My partner is allergic to eggs so for the longest time, I omitted the egg whites in cocktails. Luckily, we are able to experience the foamy goodness with this vegan alternative. Plus, aquafaba is essentially free so it is the clear choice for my home bar! I always save the aquafaba from chickpeas whenever I use them in my cooking (which is often). A fresh supply of aquafaba is readily available in our fridge at all times!

Seafoam Blue Hawaii Cocktail

The coconut flavour in this cocktail comes from Malibu rum. I cannot remember the last time I bought a bottle of Malibu, but I am happy to have it in my liquor collection now. It has that familiar and creamy coconut taste which pairs perfectly with pineapple juice. It is a fun product for experimentation.

Seafoam Blue Hawaii Cocktail

Although it tastes like candy, this drink is surprisingly potent! Drink responsibly so you don’t end up with the world’s worst hangover tomorrow. The gorgeous green-blue hue is reminiscent of the Pacific ocean and will take you back to a hotel balcony in your favourite tropical paradise. Pictured below, Hanauma Bay on Oahu, Hawaii is one of my all time favourite places. If you close your eyes, you can almost hear the ocean in the distance. Seafoam

An updated version of the classic Blue Hawaii Cocktail

Servings 1 drink

Equipment

  • Boston Shaker
  • Jigger
  • Hawthorne Strainer

Ingredients
  

  • 1 oz light rum
  • 1 oz Malibu rum
  • 1 oz pineapple juice
  • ½ oz blue Curacao
  • 4 dashes orange bitters
  • 1 oz aquafaba
  • mint for garnish

Instructions
 

  • Combine all ingredients in a Boston Shaker and dry shake (without ice) to create foam from the aquafaba.
  • Add ice and shake again until the outside of your shaker is frosty.
  • Strain into a chilled coupe glass and garnish with a sprig of mint. Enjoy!
