Trim the greens off of the beets and thoroughly wash to remove all traces of soil. No need to peel before cooking, the skin will come off easily once cooked.
Place steaming rack and steamer basket into instant pot and add beets on top.
Add water to the InstantPot, making sure the water is not high enough to come in contact with the beets.
Pressure cook on high for 30 mins. Quick release once finished cooking.
Check to see if the beets are tender by inserting a toothpick into the middle. It should insert easily.
Wait until the beets are cooled before removing the skin with a vegetable peeler.
Chop up as desired and add to your favourite salads, smoothies, or enjoy as a side dish!
